Just wanted to write a post about eggs and how much I love Canadian Eggs. It’s close to Easter and eggs are really popular right now. I’m not going to show you Easter egg ideas here just my favourite ways to eat eggs!
I love scrambled eggs cooked with some margarine and olive oil, Wrapped up with tomato, Canadian marble Cheese, salt and pepper, lettuce and some Tabasco!
Simple hardboiled eggs!

Devilled eggs!
In the filling I added mayonnaise, mustard, cayenne pepper, salt, black pepper, a dash of tabasco and green olives for garnish!
Does your mouth water when you think of olives?
My mouth automatically waters when I think of olives! lol
Egg sandwiches and tea! (Tetley Tea)
I used the same filling as my devilled eggs here but added little bits of celery and bits of the green olives. The possibilities are endless when making egg sandwiches!
Sunny Side Up!
I can’t think of a better combo! Tomato and eggs are a great combo! Here I used olive oil, salt and oregano. Eggs and oregano are just amazing togehter.
Really wonderful combo! now I just need some b a c o n ! lol
Eggs Simmered in Fresh Tomato
Eggs simmered in fresh tomatoes, olive oil, oregano, salt, pepper and garlic! This with crusty bread is AMAZING!
Recipe
Ingredients
2 eggs
2 freshly grated tomatoes (I don’t add the skin or exterior of the tomato)
2 crushed garlic gloves
2 to 3 tbs olive oil
Pinch of salt, pepper and oregano.
Directions
On medium heat add grated tomatoes, olive oil, mashed garlic, salt, pepper and oregano. Once it starts bubbling a little add eggs and cover. When the eggs get all white like the picture above remove from heat. Enjoy with toast or crusty bread. The eggs should be soft but if you don’t like runny eggs just cook longer.
