These came out really moist and delicious! I hope you try this recipe out and let me know what you think.
Ingredients
1 1/2 Cups of Flour
1/2 cup of sugar
2 tsp baking powder
1/4 tsp salt
1 1/2 cups milk
1/4 cup vegetable oil
1tsp vanilla extract
2 eggs
1 cup blueberries
1/4 cup cocoa powder
1/2 cup of chocolate chunks (I used leftover EASTER chocolate.)
Instructions
In a bowl mix all dry ingredients and set it aside.
In another bowl mix the wet ingredients.
Combine the wet ingredients with the dry and fold the blueberries and chocolate chunks at the end.
Use baking spray on the muffin tin. No need to use papers but if you do spray the inside of the muffin papers.
Place in a 350F oven for 30 min.

Making these!! Going to experiment and try PB2 instead of flower, almond milk, and olive oil instead of VO. We shall see how this goes 🙂
