Lentil Potato Vegetable Soup


14 Cups of water or broth of your choice.

1 1/2 cups of lentils cleaned and washed.

2 onions finely chopped

4 garlic cloves finely chopped

2 bay leaves

2 all spice balls

1/4 tsp pepper

1 tbs salt

1/4 tsp dried mint

1/4 tsp dried thyme

3 tbs olive oil

1 1/2 cups of cubed potatoes

1 cup frozen mixed veggies

1tsp Worchestershire sause

A couple of splashes of Tabasco sauce

1/2 cup tomato sauce or pasta sauce

1 tbs fresh parsley finely chopped


First sift through the lentils and make sure there are no rocks in it. Then wash them really well.

Put everything in a pot and cook for 45 to 50 min.


Tastes amazing with garlic bread.

  1. This really inspired me this morning to get my lentils out with all the nutrition reading I’ve been doing all week to stabilise sweet cravings. I ended up making a lentil curry as I’d defrosted chicken but cannott wait to make this sometime soon – got a huge bag of lentils to get though!! x
