This recipe makes 12 muffins.
Ingredients
In a bowl add
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 tsp all spice
In another bowl add
1/2 cup sugar
1 egg
1/2 cup coconut milk
1/3 cup melted butter
1 tsp vanilla
Mix until well blended.
Mix the wet with the dry and add
1 1/2 cups of shredded Carrots
Bake in a 400F oven for 20-25 min.
Enjoy!
I bet the coconut milk just puts these over the top! My house eats muffins everyday!!! I’d have to omit carrots. Do you think that would affect anything. My husband won’t eat carrots.

You can’t really taste the coconut milk. How about adding Apple instead of carrot? It will be like an apple pie! Yummy! Lol
