2 Cups of Italian Rice
5 Cups of Milk
1 Slice of Lemon Peel
1/2 Vanilla Pod
1 1/2 Cups of Sugar
Cinnamon to sprinkle at the end.
- In a pot of water, boil the rice until the rice is almost done. Not too soft but not too hard. Approximately 10 min. Drain rice and set it aside.
2. In another pot add the milk, the lemon peel the vanilla pod ( I scrape the inside of the vanilla pod and place the seeds right inside the milk. I also add the pod in the milk too.) Add the sugar.
3. When the sugar is diluted add the partially cooked rice, mix and on medium to low heat boil for 20 min.
4.Stir the mixture occasionally and keep an eye on it so it doesn’t over boil.
5. Take it off the heat and place it in small bowls. Don’t sprinkle the cinnamon right away. Wait until the rice pudding is cooled down a bit. You can have this warm or cold. You can also sprinkle raisins and nuts on top! Either way it is delicious and comforting. I tried this recipe many times and each time it comes out perfect!
