Carrot Quinoa Ginger Soup – RECIPE

Ingredients and Instuctions

In a pot add:

8 Cups Water

2 Cups of chopped up Carrots

1  Allspice ball

3 Cloves of Garlic

1 Whole yellow onion

1 tsp salt

1/4 tsp black pepper

1 Vegetable or Chicken bouillon cube

1 tbs Olive Oil

1 tbs Paprika (not spicy)

1 tsp onion powder

1tsp garlic powder

1tsp ginger powder

  1. Boil for 35 min on medium heat and then remove the allspice ball.
  2. I use my hand blender and pureed the ingredients.  I leave some chunks of carrot.
  3. I then add 1 Cup of Quinoa and boil for 15 min.
  4. Take  it off the heat and cover for 5 -10 min and enjoy!

Goes really well with dried crunchy toast or bread.

Zucchini and Carrot Pumpkin Spice Muffins

I really love zucchini and I decided to incorporate them in a muffin recipe. This is perfect for back to school and the kids get their veggies. My girls love these and I hope you try this recipe out.

 
Set oven to 350F

Makes 12 muffins

Ingredients

1 1/2 cups of flour

1tsp baking soda

1tsp baking powder

1/2 tsp salt

1/2 tsp pumpkin pie spice

1 cup of shredded zucchini

1 cup of shredded carrots

1 cup sugar

1 egg

1/3 cup butter

Instructions 

In one bowl add all dry ingredients.

 
In another bowl cream butter,

sugar and the egg.

 Add the zucchini and carrots.

 
Mix them together.  Then add the wet to the dry and mix. Spray your muffin papers with baking spray. Spoon mixture in the muffin papers and bake for 30 min.

1tsp Baking soda

1 tsp Baking powder

1/2 tsp Salt

1 tsp Cinnamon

In another bowl add

1/2 cup Sugar

1 Egg

1/2 cup Milk

1/3 cup Melted Butter

1 tsp Vanilla

Mix wet and dry together and add

1 1/2 cups of shredded carrot

Bake in a 400F oven for 20 to 25 min

Makes 12 muffins

Carrot Spice Muffins

  
Set oven to 400F

This recipe makes 12 muffins. 

Ingredients 

In a bowl add

1 1/2 cups flour

1 tsp baking soda

1 tsp baking powder 

1/2 tsp salt

1/2 tsp cinnamon 

1/4 tsp nutmeg 

1/4 tsp ginger 

1/4 tsp all spice 

In another bowl add

1/2 cup sugar 

1 egg

1/2 cup coconut milk 

1/3 cup melted butter

1 tsp vanilla 

Mix until well blended. 

Mix the wet with the dry and add 

1 1/2 cups of shredded Carrots 

Bake in a 400F oven for 20-25 min. 

Enjoy! 

Cream of Carrot Soup

Cream of Carrot Soup

Serves 4

In a pot add

4 cups water

8 carrots roughly chopped in chunks

2 celery stalks with the leaves

1 onion chopped up

1 chicken cube ( I use knorr)

1 tbs olive oil

1 fresh or dry mint leaf.

1 tsp of paprika

1/4 tsp of ground ginger powder

1 tsp garlic salt

Pinch of pepper

1 cup cream

Boil until a fork goes through carrots smoothly.

Purée the soup

Add cream

Enjoy!
