Chicken Lemon Veggie Soup Recipe


Ingredients for the chicken stock

10 cups of water

3 Chicken Breasts

( I only use one cup of chicken and save the rest of the chicken for other meals.)

1/2 an onion

2 Bay Leaves 

3 Celery Sticks with the stock

3 Carrots

1 tsp salt

2 Garlic cloves 

Let all the above ingredients slowly simmer for 30 min. 

Strain Stock and pour it back in the pot.

 Let chicken cool before chopping it up

In the chicken stock add

1 1/2 cup chopped celery 

1 cup chopped carrots

1 cup of chopped up chicken

1 tsp salt

1 tsp parley dry flakes

1 chicken cube

1/4 tsp black pepper

Boil for 30 min. Turn heat off.

Add rice and the juice of one lemon and take off heat, stir and cover. 

The rice will cook slowly with the heat that’s in the pot.

It should be ready in 20 min.

Chicken Vegetable Soup – Recipe

Ingredients

10 Cups of water

4 Chicken Thighs

1 Yellow onion

2 bay leaves

1/4 tsp of black pepper

2 tsp salt

1 chicken bouillon

1 allspice ball

1/3 cup Olive oil

2 big carrots

1 cup chopped up celery

2 celery sticks

2 garlic cloves

*OPTIONAL :  1 cup rice or 1 cup pasta

INSTRUCTIONS

  1. In a pot add 10 cups of water  with the washed chicken. Bring to a boil and skim the top. The chicken creates a foam on the top and you must take that foam out of the broth. I just use a spoon.
  2. Add 1 yellow onion, 2 bay leaves, salt, pepper, chicken bouillon, allspice, olive oil, garlic salt, garlic cloves, the 2 big carrots and the 2 celery sticks and boil for 30 min on medium heat.
  3. When chicken is cooked strain the broth into a new pot.
  4. Place on medium heat and add the *OPTIONAL RICE OR PASTA
  5. Clean chicken, cut into small pieces and add that to the broth.
  6. Cut the cooked carrots into small bite size piece and add that to the broth.
  7. Take the cooked onion and blend it in a blender until it becomes smooth. Add that to the broth.
  8. Add the uncooked chopped up celery to the broth.
  9. Add your pasta or rice. This is OPTIONAL.
  10. On medium heat boil for another 20 min or until your * OPTIONAL PASTA AND RICE IS COOKED.

Chicken Penne Vegetable Soup

  
In a pot add 

12 Cups water

2 Chicken Breasts 

2 Chicken cubes

1 yellow onion 

1 tbs olive oil

1tsp salt

Boil for 30 min on medium heat. 
Clean off the top foam that forms on the top of the pot. 

Take everything out of the pot and in the stock add
3 cups penne pasta

1 cup mixed frozen veggies 

A pinch of black pepper

A pinch of oregano

A pinch of dried mint leaves 

Cook for 10 min or until the pasta is cooked. Turn heat off. 
Cut the chicken into cubes and add them in the pot. 
Take the cooked onion and purée it and add it In the soup.

Chicken Soup
Ingredients and instructions

In a pot add…
14 cups water
3 chicken legs
1 onion
2 chicken cubes
1/2 tsp garlic powder
2 all spice balls
2 bay leaves
1/2 tsp thyme leaves
A pinch of pepper
1/2 tsp salt
A pinch of crushed dry mint leaves

Boil for 30 minutes
After 30 min take out chicken, onion and all the spices.

While the chicken and onion are cooling…

In the pot and on medium heat
Add 1 cup Italian rice to the stock
1 tbs olive oil
And 1/2 cup green peas

Keep cooking on medium heat for 20 min.

While that is cooking for 20 min
Cut chicken into little pieces and add it in the pot and mash the onion and add to the pot.

When 20 min is up remove from heat.
