Autumn Beef Stew Recipe

I love hardy soups and stews do you? I hope this recipe brings the meaning of comfort and cozy to a new level in your life. My family loves my beef stew. It’s delicious and hardy and it brings comfort to those cold Autumn days. Enjoy!

Ingredients

1lb – 12 oz of Stewing beef or strip loin chopped in cubes. I used the last pieces from a whole strip loin.

8 Cups of Beef Broth

1 Cup chopped carrots

1 Cup chopped celery

1 Yellow Onion finely chopped

1tsp salt

1tsp pepper

5 Cups chopped Potatoes

2 Bay leaves

1 All spice ball

2 garlic cloves minced

1/4 tsp mint

1/4 tsp basil

1 tbs flour and 1tsp gravy powder (mix with a little beef broth and add it at the end of cooking as a thickening agent)

Instructions

I made my own beef broth but feel free to use store bought. I made my broth with scraps of beef, onion, carrots, celery and the same spices in the recipe.

  1. Boil your meat for 15 min in your stock and clean off the foam/dirty froth that forms on the top of your pot. Just spoon it out until there is no foam.
  2. Add all the spices and veggies to your pot and cook for 35 min.
  3. Turn pot off and in a little bowl mix 1 tbs flour and 1tsp gravy powder with some beef broth. Make sure you have no clumps add it to the soup and mix.

This soup tastes even better the next day! So delicious!

Enjoy!

I have a lot of lovely cook books in my collection and I’ve only tried a few recipes from them. It’s so funny but I love reading and looking at the pictures but never actually make any of them. Easy to follow recipes with simple ingredients that are so good for you. I’m not a Vegan but I do love eating healthy and I’m really enjoying this book. These pierogies are so incredible and by far my favourite. I love eating them as an appetizer also serving them as hors d’oeuvres by cutting them in half.
They are soft and creamy and very mouth watering. The flavour of the cheese and bacon really come through and are very delicious.

REVIEW

I really like the Neal Brothers Extremely Tasty Kettle Chips. They are not too greasy and they indeed are very  flavourful. I love the Himalayan Sea Salt and find them not too salty but they have just the right amount of salt. These make great scoops for dips because they have the perfect strength and crunch. I love these with salsa and hummus but I also enjoy them with my chilli! Truly satisfying and the perfect crunchy texture. The Maple Bacon Kettle chips didn’t last long at all. I honestly like them so much I ate them all in one sitting and I’m not sorry at all! They have the perfect combination of sweet and salty. Totally delicious and perfect for parties and also for watching a movie. Delicious and the flavour is amazing! I also love using the maple bacon chips for ice cream topping.

Neal Brothers Foods is a gourmet Canadian Food company founded in Aurora, Ontario by brothers Peter and Chris Neal. The brothers started in their family kitchen in 1998, Neal Brothers Foods was founded out of passion for great tasting, “better for you” snacks. Their commitment has always been, and remains steadily to offer food products that are healthier than the norm, using the best ingredients to achieve that, no matter the cost. One of the most popular items in the Neal Brothers lineup, all-natural, non-GMO, kettle -cooked chips are now available in the U.S. Along with the line of chips they also have tortilla chips, gourmet mayonnaise, organic popcorn and sauces that include dressing and salsas.

We started Neal Brothers in the spring of 1988 with the idea that we could offer food products that were better than what was currently on the market. We wanted to use a combination of more natural ingredients, good value, and sexier packaging to give consumers more choice from the typical offerings of the national brands and expensive imports of the day. Our commitment has always been, and remains steadily, to offer food products that were healthier than the norm, using the best ingredients to achieve that, no matter the cost. In the early 1990’s, we searched hard to find organic ingredients because we believed in the whole concept and importance of eating organic in order to live healthier today and equally as important, to sustain the environment in the future. Organic ingredients were not readily available for our manufacturing needs at the time but as they became available over the years, we added more and more organic items to our Neal Brothers lineup. – NEAL BROTHERS

Happy Holidays my wonderful friends. I wish you the very best this Holiday Season and a Happy and wonderful New Year! This is the most beautiful time of the year when I can indulge in many treats and yummy desserts and not feel bad about it. Actually this is not a rule for me. I actually feel this way all year round! haha! Today I’ve created three easy lovely recipes for the holidays and I hope you try them out. The first one is Mincemeat Pies. Did you know they don’t have meat in them? The second is a Almond Milk Vanilla Chai Latte and the last one is yummy Rocky Road Chocolate Squares.

Almond Milk Vanilla Chai Latte

Ingredients

2 Cups of Plain unsweetened Almond Milk

(Feel free to use what ever almond milk you like.)

2 Tazo Chai tea bags

2 Tbs Honey

1 Star Anise

1/4 Tsp Pure Vanilla extract

2 Cinnamon Sticks (One for warming up and one for decoration)

A pinch of Cinnamon

A pinch of nutmeg

Directions:

Add everything to a pot and slowly warm it up. Do not boil it. EnjoY!

Mince Pies

A mince pie is a sweet pie of British origin, filled with a mixture of dried fruits and spices called “mincemeat”, that is traditionally served during the Christmas season… -Wikipedia

1 Package of Presidents choice Puff Pastry

1 Jar of Presidents Choice Mincemeat Pie filling

1 Apple finely chopped

Icing Sugar to sprikle

12 Cup Muffin Pan

Pam Spray or oil to grease the muffin pan. (Very little)

15

Instructions

Preheat oven to 350°F

Gently grease the muffin pan. I used a little oil. You can use Pam or butter. Very lightly.

Chop up the apple and add it to the mincemeat pie filling.

Roll out the puff pastry and cut 12 circles to fit each muffin cup.

Make sure the puff pastry comes up the sides of the muffin cups.

Add a 1 tbs of minced meat filling in each muffin cup.

Take the second puff pastry and cut out 12 stars.

Place each star on top of each mincemeat pie and gently press each corner of the star to the pastry. This is just so that it attaches to it.

*Try not to stretch the stars and best to use puff pastry when it’s very cold.

Place in oven for 25 min or until golden brown.

Let them cool before topping them with icing sugar.

Enjoy!
