The Perfect Summer Fusilli Greek Salad RECIPE

Happy Monday! I made this delicious Greek Fusilli Salad today and I absolutely love it. I really want to share it with you and I hope you give it a try. This recipe is enough for 10 or more people.

Ingredients

500 Grams of Fusilli Pasta cooked and cooled down

1 Green Peper

1 Red Pepper

1 Yellow Pepper

1 Big White Sweet Onion

1 tbs salt

1/4 tsp Black Pepper

1tbs dry oregano

Dressing

1 Cup fresh parsley

1 Cup Olive oil

1/2 Cup Vinegar

1 garlic clove

INSTRUCTIONS

  1. Cook pasta in salted water then cool. Set aside in a big bowl.
  2. Cut all peppers and onion into small bite size pieces. Place them in the bowl with the pasta.
  3. Sprinkle the pasta and chopped peppers and onion with salt, black pepper and oregano.
  4. In a mini blender blitz parsley, olive oil, vinegar and garlic. (if you don’t have a blender or mini chopper just mix the vinegar and oil until it looks creamy, mince the garlic and finely chop the parsley.)
  5. Add the dressing to the pasta and mix with a spoon.
  6. Top the salad with Feta and if you like some lovely olives.

Fall Pumpkin Soup Recipe

Happy Monday! I hope you had a lovely weekend. I’m here to share a soup I made on the  weekend. It’s cozy, spicy and delicious. Here are the ingredients.

INGREDIENTS 

1 Onion

1 garlic clove

2 tbs Olive Oil

1/4 tsp thyme

1/4 tsp black pepper

1tsp salt

1/4 tsp turmeric

1/4 tsp ginger powder

1/4 tsp pumpkin pie spice

1/2 tsp brown sugar

1 tsp red curry paste

6 cups pumpkin puree. (I made my own fresh puree but you can use canned.)

1 cup of water

1 chicken cube

Instructions

  1. Finely chop the onion and garlic.
  2. In a pot that is set low to medium heat add olive oil and fry the onion and garlic until its translucent.
  3. Add all the spices and mix.
  4. Add the 6 cups of pumpkin and the water to the pot.
  5. Add the chicken cube.
  6. Cook on low to medium heat for 25 to 30 min. Make sure you have a lid on the pot because it bubbles and platters.
  7. Add crispy onion bits on the top of the soup.

Thursday Pick-Me-Up! JUICE IT!

Today I feel like having a lovely refreshing boost Juice! I have a juicer that I’ve had for many years and I use it once and a while. I love juicing and drinking down refreshing fruits and veggies. I just don’t like the clean up. lol But this is definitely a refreshing and citrusy juice that really boosts energy and is very nutritious and beneficial to the mind and body.

INGREDIENTS

1 Orange

1 apple (Ginger Golden)

1tsp Ginger

1/2 Cup Kayle

1 Mint Leaf

1 tsp Lemon

1 Carrot

Boosts Immune system, source of fibre, improves blood circulation, blood pressure regulation, reduces inflammation, prevents cancer, prevention of kidney stones, improves cholesterol.

Apples

Antioxidant, flavonoids, and dietary fiber. The nutrients help reduce risk of cancer, hypertension, diabetes and heart disease.

Kale

Vitamin A, C and K. Folate, a B vitamin key for brain development. Alpha-linolenic acid, an omega-3 fatty acid.

Carrot

Beta-carotene, fiber, vitamin K, potassium and antioxidants. Carrots lower cholesterols levels and improve eye health.

Thursday Pick-Me-Up! Cocoa Banana Smoothie

Hello and happy Thursday! I’ve decided to start a series for every Thursday called Pick-Me-Up. The reason behind this is that by Thursday I totally need an energy drink, smoothie bowl or healthy snack with vitamins and all the good stuff! I really need a healthy PICK-ME-UP do you?

Today’s Pick-Me-Up recipe Drink is Cocoa Banana Smoothie with Vegan Greens and a sprinkle of chia seeds. It is light and really heightens energy.

INGREDIENTS

1 1/4 Cup milk ( You can use milk of your choice)

1 tsp cocoa powder

1 banana ( it’s nice to use a frozen banana. It makes the smoothie cold and refreshing)

1/3 scoop of Genuine Health vegan greens + O

2 tbs Honey ( Or a sweetener of your choice)

A sprinkle of chia seeds on top.

Blend and enjoy!
