Lentil Soup – Recipe

Yet another cozy soup for the cold weather. I love soups and I’m obsessed with creating my own soup recipes. This one is hardy and delicious.

Ingredients 

10 Cups of water

2 1/4 cups of Green Lentils (I always go through the lentils just incase there are little unwanted rocks and I also wash them.)

4 Chopped Cloves of Garlic

1 Chicken Cube

1 tsp parsley

1/4 tsp black pepper

1 tsp salt

2 all spice balls

1 cup chopped carrots

1 cup chopped celery

1 tsp dry basil

1/4 cup of olive oil

2 tbs tomato paste


Instructions

Add all ingredients except tomato paste to a pot. Boil for 20 min then add 2 tbs of tomato paste and cook for another 10 min.

Carrot Ginger Soup – RECIPE

Today I made a warm cozy carrot ginger soup that is absolutely delicious! I’m so happy to share it with you.  It is super easy and yummy. Perfect for the cold weather.

Ingredients

8 Cups Water

1 Chopped Onion

3 Cloves garlic

4 Cups chopped Carrots

2 Chicken cubes ( you can use veggie cubes)

1 tsp salt

1/4 tsp Black pepper

1 tsp Coriander powder

1 tsp Turmeric powder

2 tbs Olive Oil

2 tsp Ginger powder

2 Potatoes (cleaned pealed and chopped up)

1tsp Thai Red Curry Paste

1 tsp dry parsley

Instructions

Add all ingredients except parley to a pot and boil for 30 min. After 30 min blend/puree the soup and toss in the parley. Top with crunchy onion bits and fresh green onion bits.

Fall Pumpkin Soup Recipe

Happy Monday! I hope you had a lovely weekend. I’m here to share a soup I made on the  weekend. It’s cozy, spicy and delicious. Here are the ingredients.

INGREDIENTS 

1 Onion

1 garlic clove

2 tbs Olive Oil

1/4 tsp thyme

1/4 tsp black pepper

1tsp salt

1/4 tsp turmeric

1/4 tsp ginger powder

1/4 tsp pumpkin pie spice

1/2 tsp brown sugar

1 tsp red curry paste

6 cups pumpkin puree. (I made my own fresh puree but you can use canned.)

1 cup of water

1 chicken cube

Instructions

  1. Finely chop the onion and garlic.
  2. In a pot that is set low to medium heat add olive oil and fry the onion and garlic until its translucent.
  3. Add all the spices and mix.
  4. Add the 6 cups of pumpkin and the water to the pot.
  5. Add the chicken cube.
  6. Cook on low to medium heat for 25 to 30 min. Make sure you have a lid on the pot because it bubbles and platters.
  7. Add crispy onion bits on the top of the soup.

Thursday Pick-Me-Up! Chia Seed Pudding With Blackberries, Honey & Pecans

Happy Thursday! I’ve created a lovely Pick-Me-Up snack for today. I don’t eat enough blackberries and I really love them. This is a delicious one if you love chia seed pudding. I hope you try it out.

Ingredients

4 Tbs White Chia Seeds I use PRANA

1 Cup of milk (You can use what ever milk you like)

2 Tbs of Honey

6 oz of  blackberries

1 mandarin

A handful chopped up pecans for the topping.

This makes three servings.

How to make it:

  1. Mix chia seeds in a bowl with milk and honey. Mix very well.
  2. Pour it in three small bowls. Place the bowls in the fridge and let it thicken. It should take a couple of hours but I leave mine overnight.
  3. Wash the blackberries and add them on top.
  4. Add a sprinkle of pecans.
  5. Peel mandarin and add a couple to each bowl.
  6. Top it with a drizzle of more honey.

Delicious and Delectable Cookies! The Finer Cookie

I won a lovely box of cookies from The Finer Cookie.  The lovely Little Life Box on Instagram was hosting a giveaway and I won! I wanted to share how beautiful these cookies are and how delicious they taste. I didn’t have to write a blog post about them but I feel it’s a MUST! I feel this is the perfect gift for the holidays.  The yummiest gift for your self and for others. If you don’t have time to bake this is totally perfect. Nothing is better then home made, delicious, mouth watering cookies. You can also buy these and freeze them in time for Christmas. That’s not the case with me though because I dug into these cookies fast. See how this picture has three yellow lemon Macarons? Well there’s supposed to be four!  They are so yummy!

The box arrived in an insulated cooling bag with ice. Everything was packaged perfectly. The Finer Cookie Corporation bakes its cookies in a shared kitchen that meets the Canadian and Provincial regulations for health, safety and sanitation. The package came with information about each cookie batch and the ingredients. Everything in this box smells like being in a pretty and cute patisserie! I love how everything is labeled. I appreciate hand written labels. Makes it so special don’t you think?

I kindly received the Deluxe, Posh and Swank Cookie Sampler. It has Lemon Macarons, Peanut Butter Cream Cookies, Orange Truffles, Maple Madeleines, Bacon Fat Gingersnaps, and Chocolate Shortbreads with Malted Milk Buttercream. Heavenly and so mouth watering!

The Lemon Macarons are citrusy and have that little crunch with sweetness. They taste and smell divine!

19My mouth waters when I think of them. The Peanut Butter Cream Cookies have a lovely crunchy texture. These are perfect to dip in coffee, tea and milk. Each cookie has the most delicious and flavourful filling ever! Divine!

The Orange Truffles are very smooth, creamy and melt in the mouth. They are not too sweet, which I like. They taste like creamsicle popsicles. Orange yummy flavour with a little tartness.

The Maple Madeleines are just perfect. They are soft and spongy, not too sweet. Very delicious! These are the perfect tea cookie because the flavour is not strong but subtle.

The Bacon Fat Gingersnaps are perfect! Not too much bacon flavour and just the right snap and ginger. They have the right crunch. Perfect explosion of cinnamon flavour when immersed in a drink and then in the mouth. Yummo!

The Chocolate Shortbreads with malted Milk Buttercream are delicious! They have the perfect consistency and taste. They have the right amount of chocolate and the Malted Buttercream compliments the Shortbread so nicely. A match made in heaven!

My favourite cookies in this box have to be the peanut butter cream cookies, the lemon macarons and the chocolate shortbread. My youngest daughter Angelina, age 5, loves the gingersnaps and maple madeleines. My eldest daughter Eleni, age 10, loves the chocolate shortbread with malted milk buttercream. Hubby Loves the bacon fat gingersnaps and the orange truffles. One day later and these cookies are almost gone. I highly recommend you check out The Finer Cookie. Truly wonderful! My family really loves the cookies!
