Apple Cinnamon Walnut Muffins RECIPE

Happy Wednesday!

I have another lovely muffin recipe for you. This one is my absolute favourite!

Set Oven 350F

Makes 12 Muffins.

Place muffin papers in the muffin tin and spray them with non stick baking spray.

Here are the ingredients:

1 Cup Flour

1/2 Cup plain Oats

1/3 cup of brown sugar

1 tbs baking powder

1/2 tsp salt

1/2 tsp baking soda

1/2 cup apple juice

1 cup chopped up apple

1 egg

1/3 cup of vegetable oil

1/2 cup chopped walnuts

1/2 tsp cinnamon (mix this with the apples)

1/2 tsp cinnamon for the muffin mix

Instructions

Set oven to 350F

Set papers in muffin tray

Spray muffin papers with non-stick baking spray

Mix all the wet ingredients

Mix all the dry ingredients

Mix the wet ingredients with the dry ingredients and use a spatula.

Then add the apples and walnuts and mix.

If the recipe is too think add 1/4 cup of milk.

Spoon the mix in the muffin tray.

Bake for 30 min in a 350F oven.

Makes 12 muffins.

Pumpkin Oat Pecan Muffins RECIPE

Oh how I love pumpkin everything! Delicious and so good! 🎃

Set oven to 350F

Cook time 25 min

Ingredients

1/2 Cup Plain Oats

1 Cup Flour

1 Cup pumpkin puree

1/3 Cup coconut oil

1/2 Cup maple Syrup

1 tsp pumpkin pie spice

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg

1/2 cup chopped pecans

Instructions

Set oven to 350F.

Set your muffin tin and muffin papers.

Spray the muffin papers with baking spray.

Mix all wet ingredients.

Mix all dry ingredients.

Add the dry ingredients to the wet and mix well.

Add the nuts. Mix.

If the recipe is too think add 1/4 cup milk.

Scoop muffin mix in the muffin tin and bake.

Home is Where The Heart Is

Hope you are all doing well. Self Issolation and staying home can be very tough and difficult for many people. During this challenging time, I’ve tried to keep my self and my family calm and creative. I’ve been following a routine but I also allow my self to go with the flow.

In the mornings I wake up and have my coffee followed by my breakfast. I take my vitamins and then make the girls breakfast. Sometimes they make it themselves. Sometimes it’s toast, sometimes cereal and on special occasions it’s pancakes or waffles. That first sip of coffee is amazing!

During this #StayHome time I feel that I’ve learned a lot about GRATITUDE. I talk a lot about being grateful on my blog. Now more than ever being truly grateful is so much more than a word. I’m so grateful for our healthcare and the people who go out there and work for each day. I’m so grateful to the people who deliver foods and goods to people at home. I’m so grateful that we can buy groceries and get our medicine from he pharmacies. This is a huge deal! We are so blessed to be Canadian. I’m grateful for our healthcare, the doctors and nurses that put their life out there and take care of others. A very big thank you. G R A T E F U L for everything you do.

I’ve been vlogging but not as much as I would like to. I’ve been work with my girls and their homework. Following the homework I do my exercize for the day. I’ve been following the 30 Day Yoga challenge. I’m now on day 3. I am keeping a fitness journal and I’m documenting my experience which I hope to share with you in the coming months.

Easter was different this year. But we made the best of it. The girls painted their eggs and did their Easter egg hunt. It was nice and we are so grateful that we can still do these things. I’m so grateful for having space and a backyard. So grateful for everything we DO have. G R A T I T U D E.

My girls are enjoying their time at home. They do homework, artwork, they go outside in the back and stay active. They play their games and toys and digital gadgets. They watch their movies and have fun. They are happy and healthy. I’m so blessed and again G R A T E F U L.

I asked my daughters to choose a recipe and make something. We had a lot of carrots 🥕 so they made delicious carrot muffins. They used Ricardo’s Carrot Muffin Recipe. HERE

Baking and cooking is such an important part of our home. My husband made macarons for the first time and I couldn’t be more proud of him. They were delicious! The filling was a lemon meringue.

I truly hope you are all well. I hope you are doing things you love. I hope you are enjoying reading, writing, cooking and staying calm. This too shall pass and one day we will look back at this time and see how strong were were as a community. I would love to know how you are all feeling. Stay strong, stay healthy and be safe!

Banana Chocolate Chip Muffin Recipe


Hello my lovely friends! I made these yummy and delicious Banana Chocolate Chip muffins and I just had to share this recipe with you. These are so yummy and delicious. I hope you try this recipe out.

Dry ingredients

2 Cups Flour

1/2 Cup Sugar

2tsp baking powder

1tsp baking soda

1/4 tsp salt

1tsp cinnamon

Wet Ingredients

2 eggs

1 cup milk

1/4 cup oil

2 bananas

Mix Dry ingredients and then mix wet ingredients and add them together.

Add the chocolate once both wet and dry are well combined.

1 1/3 cup chocolate chips

mix with a spatula

Bake in a 350 degree oven for 25 min.

Apple Honey Cinnamon Crumble Muffins

I love apples and cinnamon and of course a yummy delicious crumble. I’m sharing this recipe with you because not only does it make the house smell incredible but it screams FALL.

I’ve shared an apple cinnamon muffin recipe before but this one is made with oil and not butter and this version has a caramelized crumble topping with honey that is textured and candied on top. My previous recipe is really yummy too. Check it out If you like. Apple Cinnamon Muffins – Recipe

INGREDIENTS 

In One Bow mix dry ingredients

1 1/2 Cups of Flour

1 tsp baking soda

1  tsp baking powder

1/2 tsp salt

1 tsp cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground cloves

In another bowl mix the wet ingredients

1/2 cup white sugar

1 egg

1/2 cup milk

1/3 cup oil

1 tsp vanilla

Third Bowl 

1 1/2 cups of finely chopped apple. I chopped them in my mini chopper.

 Coat the apples with 1 tsp of cinnamon and 1tsp of sugar


I used the ginger apples from our apple picking experience.

Caramelized Crumble Topping

1/2 Cup Brown Sugar

1/2 Cup Oats

1/2 tsp Cinnamon

1/4 Cup of Honey

I used my mini blender and mixed all these ingredients to create a crumble.


INSTRUCTIONS

  1. Heat oven to 400 F.
  2. Spray 12 Muffin papers with baking Spray.
  3. Mix Dry ingredients with wet ingredients then add the apples in the mixture.
  4. Fill muffin papers half way up.
  5. Sprinkle a little of the Caramelized Crumble Topping on each muffin.
  6. Bake in a 400F oven for 20-25 min.
