Summer Fresh!

Hello my wonderful friends!

The weather is warming up so nicely and I just feel so inspired by the weather, my garden and everything around me. I wanted to share with you some refreshing cooling and hydrating recipes and creative ideas for the Summer. The recipes in this blog post are fantastic for Summer parties as well.  I’ve created a delicious quinoa salad, infused water, fun ice cubes, home made ice tea and a refreshing healthy fruit slushy!

IMG_9127I don’t know about you but if I was served this amazing food at a party I would be one happy person! Well I’m always happy but an extremely happy person!

QUINOA SALAD

I created this lovely quinoa salad which is inspired by all the fresh veggies I truly love and enjoy.  This is a very delicious cooling and refreshing salad perfect for Summer!

 
Ingredients and Measurements 

In a bowl add

1 cup cooked quinoa

1/2 cup cubed cucumber

1  Finely chopped green onion

1 tbs Lemon juice

1 tbs finally chopped parsley

4 Kalamata olives chopped up

1/2 cup tomato cubed

2 tbs crumbled feta

2tbs of Kraft Fig Balsamic olive oil (I LOVE THIS DRESSING!)

Mix and refrigerate.

Best enjoyed when cooled.

What a great salad! It’s so delicious and refreshing for a hot day! You can double the recipe if you have family and friends over.  This lovely salad is perfect with some homemade ice tea!

BESTDAYBLOGGER’S HOMEMADE ICE TEA  

Ice Tea Recipe

4 cups of boiled water

Add 2 tea bags of tetley or other tea of your choice in the water.

Add 1/2 cup of sugar.

Mix until sugar dissolves and let it sit to reach room temperature.

 In a jug of your choice fill it with *ice all the way to the top.

(You can use the infused ice with lemon and mint.)

Add the room temperature tea in the jug with the ice and with 1/2 lemon juice.

Serve chilled and enjoy!

 

You can always serve infused water in various combos of your choice. Here I’ve chosen strawberries and peaches. I also like the flavour of Cucumber and mint.

 REFRESHING!
You can also insert mint, cucumber and lemon in your ice trays for some fancy ice cubes! I love the way they look!

On those hot Summer days nothing is better then a slushy that is healthy!  This recipe is amazing! My kids love this!

Pineapple & Peaches with Mint and Ginger Slushy  

Ingredients 

In a blender add

1 cup frozen peaches

1 cup frozen pineapple

1/4 tsp freshly ground ginger

2 mint leaves

2 cups ice tea or water

Blend

You can also add alcohol after the slushy is blended. ( Adults only )

Enjoy!

Chilled Chicken Salad

This is a  creamy and cold salad that is filling and comforting.

Perfect for summer!

Ingredients and instructions 

Place everything in a bowl, mix and refrigerate for 1 hour.

1 Apple cut in chunks

1 Pear cut in chunks

1 Cup chicken breast cubed

1/2 cup cucumber cubed

1/3 cup finely chopped celery

1 finely chopped green onion

1 tbs parsley

1/2 of a Lemon juiced

1 tbs olive oil

1/4 tsp salt

1/4 tsp oregano

A pinch of black pepper

1 tbs fresh dill

1/3 cup of Mayonnaise

Mix and cool for 1 hour.

Enjoy!

Olive Oil Potato Herb Pea Salad

  
Ingredients 

6 Cooked potatoes peeled and                              chopped up. 

1 Cup cooked Peas

1 Garlic clove

1/2 Onion finely chopped

1tbs Fresh dill

1tbs Fresh parsley

1/2 Cup olive oil

1/4 tsp Black pepper

1/4 tsp Oregano

1/4 Onion powder

1/4 tsp Paprika 

1/4 tsp Garlic Powder 

1 tsp Salt 

1 tbs of white vinegar or lemon 

 Instructions 

In a food processor or blender mix olive oil, vinegar, dill, parsley and the garlic clove.  Add this mixture to the potatoes along with the peas, onion and spices. Mix the dressing with the potatos really well and refrigerate.  

   
 Simple and delicious!
