Home is Where The Heart Is

Hope you are all doing well. Self Issolation and staying home can be very tough and difficult for many people. During this challenging time, I’ve tried to keep my self and my family calm and creative. I’ve been following a routine but I also allow my self to go with the flow.

In the mornings I wake up and have my coffee followed by my breakfast. I take my vitamins and then make the girls breakfast. Sometimes they make it themselves. Sometimes it’s toast, sometimes cereal and on special occasions it’s pancakes or waffles. That first sip of coffee is amazing!

During this #StayHome time I feel that I’ve learned a lot about GRATITUDE. I talk a lot about being grateful on my blog. Now more than ever being truly grateful is so much more than a word. I’m so grateful for our healthcare and the people who go out there and work for each day. I’m so grateful to the people who deliver foods and goods to people at home. I’m so grateful that we can buy groceries and get our medicine from he pharmacies. This is a huge deal! We are so blessed to be Canadian. I’m grateful for our healthcare, the doctors and nurses that put their life out there and take care of others. A very big thank you. G R A T E F U L for everything you do.

I’ve been vlogging but not as much as I would like to. I’ve been work with my girls and their homework. Following the homework I do my exercize for the day. I’ve been following the 30 Day Yoga challenge. I’m now on day 3. I am keeping a fitness journal and I’m documenting my experience which I hope to share with you in the coming months.

Easter was different this year. But we made the best of it. The girls painted their eggs and did their Easter egg hunt. It was nice and we are so grateful that we can still do these things. I’m so grateful for having space and a backyard. So grateful for everything we DO have. G R A T I T U D E.

My girls are enjoying their time at home. They do homework, artwork, they go outside in the back and stay active. They play their games and toys and digital gadgets. They watch their movies and have fun. They are happy and healthy. I’m so blessed and again G R A T E F U L.

I asked my daughters to choose a recipe and make something. We had a lot of carrots 🥕 so they made delicious carrot muffins. They used Ricardo’s Carrot Muffin Recipe. HERE

Baking and cooking is such an important part of our home. My husband made macarons for the first time and I couldn’t be more proud of him. They were delicious! The filling was a lemon meringue.

I truly hope you are all well. I hope you are doing things you love. I hope you are enjoying reading, writing, cooking and staying calm. This too shall pass and one day we will look back at this time and see how strong were were as a community. I would love to know how you are all feeling. Stay strong, stay healthy and be safe!

With so much going on in the world I want to focus on the positive. I turned the news off. I’m staying home and doing things that keep me happy. I hope to bring some inspiration and positivity to you my friends. Stay happy and do things you love. You now have the opportunity to read, paint, write and do what ever your heart desires creatively. Keep active as much as you like. You can watch movies, meditate, exercise and get fresh air on your balcony or backyard. Cook, clean, organize and dance. Put the music on and sing or play games. Keep smiling, this too shall pass.

Today I would like to share my lentil soup recipe with you and I hope you make it at home. It’s so easy and delicious. Do you like lentils?

Spicy Lentil Soup

Ingredients

12 Cups of Chicken or Veg Broth

1 Chicken cube or Veg cube

2 Cups of washed lentils

2 Bay Leaves

2 All spice Balls

1 Finely Chopped Onion

3 Finely Chopped garlic cloves

1/4 Cup olive oil

2 Carrots Chopped up

2 tbs of tomato paste

1 tsp Black pepper

1 tsp salt

1/4 tsp cayenne pepper

1 tsp fresh thyme 

Instructions 

Place all the ingredients in pot to boil for 20 min except the tomato paste and olive oil. After 20 min add the olive oil and tomato paste and cook for 10 more min. Enjoy! Let me know if you try this recipe. 


Here is a lovely surprise recipe. I was going to post this at Christmas time but I didn’t or maybe I did and I don’t remember. lol 😆 Here is a banana cranberry muffin recipe.

Banana Cranberry Muffins

2 1/2 Cups of Flour

1 Cup Sugar

2 tsp Baking Powder

1 tsp Baking Soda

1/2 tsp salt

1 tsp cinnamon

2 tsp vanilla

1 1/2 Cups Mashed Bananas

3 cups frozen cranberries

2 eggs

1/4 cup oil

1 cup milk

Instructions

Mix all ingredients and bake at 350F for 30min
