Autumn Wild Rice Vegetable Salad RECIPE

Happy Saturday! I truly hope you are having a lovely weekend. I’ve created a delicious Autumn Wild Rice Vegetable Salad and I hope you try this recipe with your family. My family loves it!

Ingredients

5 Cups Cooked and Cooled Wild Rice

1 Red pepper thinly sliced

1 Orange Pepper thinly sliced

1 Yellow onion thinly sliced

2 Cups Steamed and room temp broccoli

1 Can Red Kidney Beans

1 Cup fresh baby spinach

1/4 Cup toasted pecans

1/4 Cup toasted walnuts

Dressing

The juice of one big lemon

The juice of one lime

1/2 Cup Olive oil

1tsp dry parsley flakes or 1tbs Freshly chopped parsley

1tsp Salt

1/4 tsp Black pepper

1 garlic clove minced

Instructions

Toast the nuts and set aside.

Make your wild rice according to the package and cool it.

Cut all veggies in thin slices.

Mix all the ingredients together.

Mix the dressing really well and drizzle all over the salad.

Mix salad really well and enjoy!

September Gratitude

Dear September, thank you for all the little special details in my life. I like to look at small things and truly appreciate them.  I really appreciate even the silence that comes my way.  Some people don’t like silence but I really appreciate it. It’s soothing.

I’m staying hydrated. Very important with the weather changing. I love this water bottle. This is my daughter’s water bottle. We bought this from Kitchen Stuff Plus. (My daughter dropped it and the lid broke. Unfortunately.)  Sometimes things happen. It’s okay. Moving forward.

Cold Got You Down? Try this Thursday Pick-Me-Up!

On Monday my daughter felt sick and had a sore throat and stuffy nose. I gave her a vitamin C tablet right away and set up essential oils for her. I love using the Thursday Plantation Oils. They truly help. I also use these topically. I added a drop of eucalyptus behind her ear lobes and chest.

I then had her use my trusted throat spray BeeKeeper’s Throat Relief. This spray helps so much. Every time my throat feels like a cat has scratched it I use this. My daughter likes this too. I kindly received this via Little Life Box. It has helped so much so thank you Little Life Box!

I came up with a vitamin infused booster drink.  I wanted my daughter  to stay hydrated and receive her vitamins and veggies to help her system. I came up with the following recipe and she loved it!

BLACKBERRY BANANA SMOOTHIE WITH VEGGIES + O

400ml Apple Juice

1 Cup Frozen Blackberries

2 Frozen Bananas (They don’t have to be frozen.)

1 Scoop of Vegan Greens + O

Blackberries

Packed with vitamin C. Just 1 Cup is a full dose for the day!

High in fiber and great source of vitamin K.


Also I love using vegan greens + O by Genuine Health.

By the end of the day she was feeling much better. What are your favourite cold remedies? I also love fresh ginger & lemon tea.

Thursday Pick-Me-Up! JUICE IT!

Today I feel like having a lovely refreshing boost Juice! I have a juicer that I’ve had for many years and I use it once and a while. I love juicing and drinking down refreshing fruits and veggies. I just don’t like the clean up. lol But this is definitely a refreshing and citrusy juice that really boosts energy and is very nutritious and beneficial to the mind and body.

INGREDIENTS

1 Orange

1 apple (Ginger Golden)

1tsp Ginger

1/2 Cup Kayle

1 Mint Leaf

1 tsp Lemon

1 Carrot

Boosts Immune system, source of fibre, improves blood circulation, blood pressure regulation, reduces inflammation, prevents cancer, prevention of kidney stones, improves cholesterol.

Apples

Antioxidant, flavonoids, and dietary fiber. The nutrients help reduce risk of cancer, hypertension, diabetes and heart disease.

Kale

Vitamin A, C and K. Folate, a B vitamin key for brain development. Alpha-linolenic acid, an omega-3 fatty acid.

Carrot

Beta-carotene, fiber, vitamin K, potassium and antioxidants. Carrots lower cholesterols levels and improve eye health.

Lentil Potato Vegetable Soup

Ingredients

14 Cups of water or broth of your choice.

1 1/2 cups of lentils cleaned and washed.

2 onions finely chopped

4 garlic cloves finely chopped

2 bay leaves

2 all spice balls

1/4 tsp pepper

1 tbs salt

1/4 tsp dried mint

1/4 tsp dried thyme

3 tbs olive oil

1 1/2 cups of cubed potatoes

1 cup frozen mixed veggies

1tsp Worchestershire sause

A couple of splashes of Tabasco sauce

1/2 cup tomato sauce or pasta sauce

1 tbs fresh parsley finely chopped

 
Instructions

First sift through the lentils and make sure there are no rocks in it. Then wash them really well.

Put everything in a pot and cook for 45 to 50 min.

Enjoy!

Tastes amazing with garlic bread.
